Freshly Made Tortillas - Right in Your Pantry
Ingredients
I don't know about you, but I like to make sure I have enough tortillas for dinner and some for leftovers too. These ingredients will make anywhere from 12-16 tortillas depending on how big or small you like them. I tend to make a variety of sizes because, why not? The kids enjoy a smaller, thicker tortillas that is easy to hold and the adults like slightly larger tortillas so I can add in all of my favorite toppings!
3 cups all purpose flour
2 tsp. baking powder
1 1/2 tsp. salt (I never actually measure out the salt)
5 tbsp. room temperature butter, shortening, or lard
1 cup hot water
Instructions
In a stand mixer with a dough hook, add in all of the ingredients.
Mix until evenly incorporated and it comes together in a ball.
Let the dough rest for about 20-30 minutes.
Separate the dough into equal parts (12-16 pieces).
Use extra flour and dust your surface and rolling pin.
Roll each piece into a ball and roll it out until you have about an 8-inch tortilla.
Heat your skillet and season it with butter or lard and then place the tortillas in the skillet one at a time and cook until it bubbles and turns golden brown (~30 seconds to a minute depending on how hot your skillet is).
Cook the remaining tortillas one at a time until they are all done.
Store the extra tortillas in an airtight container at room temperature.
